I had some extra time this afternoon since it was a running rest day, so I made some homemade running fuel/snacks. I’ve had a bag of pitted dates here and have been looking for a new way to use them other than in my oatmeal, so I thought I’d try to make some homemade protein snacks! When I make things like this I usually don’t measure exactly and they still turn out good, so here is how I made them…
1/2 cup peanut butter
1 cup oats
1/4 cup coconut flakes
1/3 cup chocolate chips
1/2 cup milled flax
8 pitted dates chopped
2-4 TBS honey
Mix all ingredients except for honey.
Get in there with your hands and add the honey 1 TBS at a time until it sticks together. Form into balls and place in fridge. It is a very messy process, but worth it! Refrigerate so that they stick together even more. I sometimes even put things like this in the freezer.
I think these will be good for before, during, or even after a run. Let me know if you try them! I am trying to add dates to my diet. I love that they are a good source of potassium as that is something I always try to get a lot of in my diet, and sweet potatoes and bananas get boring after awhile!
