Fridays are usually a rest day for me, but I had to swap it for yesterday’s run. We had a new dryer delivered and then I had to go right to the boys’ away wrestling match, so it just made more sense to switch Thursday and Friday’s plans.
Irish gets so excited when he sees me getting dressed for a run. He starts throwing his toys around to prove he is energetic and that he should come too.
We made it 2.5 miles together but they were pretty awful miles. My lower calves and tops of my ankles were killing me. I was 99% sure it was my shoes.
These Altra Intuition 3.5’s have served me well, but I’ve had them since August and there is just no more bounce left. I started noticing it last week but was in denial. Altra has already moved on to the 4 so I’m going to search the internet for a sale! Anyway, because of the shoe ordeal, I brought Irish back home and switched my shoes out in order to finish the rest of my run and test my theory regarding the pain. Altra Paradigms with less mileage for the win! (Miraculously my pain was gone. ) Keep track of your shoes mileage, people! I really love the Intuition 3.5’s so I hope I can find them in my size.
After the run I was in the mood for a clean healthy meal with lots of veggies….so stir fry for the win! I am not a rice person but brown rice is okay and I know it is a good carb to eat the night before a long run!
Spicy Chicken and Vegetable Stir Fry
1 chicken breast, cut into long thin pieces
1 cup green pepper julienned
1 cup yellow pepper julienned
1/4 cup carrots julienned
1/2 cup onion
1 cup mushrooms
1 TBS fresh ginger finely chopped
2 cloves garlic finely chopped
1/4 cup alfalfa sprouts
1/4 tsp red pepper flakes
1 TBS honey
1/4 cup soy sauce
1/4 tsp turmeric
1/4 tsp Chinese 5 Spice
1/4 tsp kosher salt
1 TBS extra virgin olive oil
Heat extra virgin olive oil in large saute pan. Add chicken and turmeric, salt, and Chinese 5 Spice. Once chicken starts to brown, add peppers, carrots, and onions. When veggies start to soften add ginger, soy sauce, honey, garlic, and red pepper flakes. When chicken is almost done, add mushrooms and alfalfa sprouts. Cook for 3-4 more minutes. Serve over brown rice. Makes enough for 3 servings.
