Forget the Super Bowl….today we’re talking about long run recovery bowls! 😂Too bad I discovered/created this a day after my long run but I’m still in recovery mode, right?
This meal really hits the spot and would be so satisfying right after a long run. I played “Chopped” tonight and came up with meal and I will definitely be making it again….probably next week. I think it has the perfect amount of protein, carbs, veggies, and sodium I need for recovery time.
Roasted Veggie & Protein Bowl
1/2 cup brussel sprouts, sliced thin
1/4 cup red cabbage sliced thin
1/2 cup potato cut into small cubes
4 slices of your favorite bacon, chopped
1 pound cooked ground turkey
1/4 cup onion
1/3 cup shredded cheese (any kind)
your fav seasoning (I used Chinese 5 Spice)
Layer brussel sprouts, potatoes, and red cabbage on cookie sheet. Drizzle with extra virgin olive oil, sprinkle with salt, and roast in the oven at 425 until tender (I like mine on the crispy side). Be sure to toss veggies after 8 minutes or so so they don’t burn. Meanwhile, brown ground turkey and set aside. Sauté bacon and onion in a small amount of butter or extra virgin olive oil. Add ground turkey and season with Chinese 5 Spice or your favorite seasoning. Top with cheese and let melt. Combine meat and veggie mixture into a bowl. Cook an over easy egg and add to top of your bowl. Getting the egg yolk to drizzle over everything is the best part. Makes 3-4 bowls so prepare accordingly! (Works for me with a husband and two ravenous teenagers!).
Some fun additions would be a sliced avocado and salsa…yum!
On the Mend
My knees are feeling a little more flexible today but still sore. I’ll survive!
And then this happened…Tough Guy’s finger is on the mend. Between wrestling and trail running injuries we’re quite the pair!
It’s always an adventure! Here’s to a great week of balance….run, rest, recover, and strengthen. I’m hoping to sprinkle in a lot more lifting and core this week.
